Gluten Free Dairy Free Pineapple Cake

Ingredients

  • Cake

  • 2 cups Gluten Free Flour Blend

  • 1 Cup Organic Cane Sugar

  • 2 Free Range eggs

  • 1 Teaspoon Baking Soda

  • 1 Teaspoon Vanilla Extract

  • 3/4 of a Fresh Pineapple (cubed) or a 20 ounce can of crushed pineapple (undrained)

Instructions

  1. Mix all of the cake ingredients together in a bowl.

  2. Pour into muffin tins and top each muffin with walnuts

  3. Bake at 350F for 30-35 minutes or until tops are golden brown.
